It’s optional, but i feel like it makes a huge difference in the overall sauce depth of flavor.Soy Sauce: Adds tons of umami flavor and saltiness that usually comes from cheese.I highly recommend using Bragg’s fortified nutritional yeast – it has the added benefits of B vitamins (hello B12) as well other essential minerals and vitamins. Nutritional Yeast: is what will add that cheesy and umami flavor to the mac n’ cheese.Silken Tofu: You can also use regular tofu if you’re in a pinch, but silken tofu will make the best creamy and smooth sauce.Additionally, to keep this healthier, I opted for brown rice elbow noodles. You can opt for the traditional elbow shape, but any shape will work.
